Ingredients
  

  • 1 lb smoked sausage or andouille sausage, sliced
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 4 cups fresh spinach or chopped kale
  • 1 tsp smoked paprika
  • ½ tsp black pepper
  • ¼ tsp crushed red pepper flakes (optional)

  • Slice sausage, dice onion, and mince garlic

Cooking

  • Heat olive oil in a large pot over medium heat.
  • Add sausage and cook until browned, about 5 minutes.
  • Remove sausage and set aside.
  • In the same pot, sauté onions and garlic until softened, about 3–5 minutes.
  • Add chicken broth, diced tomatoes, beans, smoked paprika, black pepper, and red pepper flakes if using.
  • Bring to a simmer and cook for 15 minutes.
  • Stir in spinach or kale and cooked sausage. Cook for another 5–10 minutes until greens are wilted and flavors are combined.
