- 1 lb smoked sausage or andouille sausage, sliced
- 1 tbsp olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 can (14 oz) diced tomatoes
- 1 can (15 oz) cannellini beans, drained and rinsed
- 4 cups fresh spinach or chopped kale
- 1 tsp smoked paprika
- ½ tsp black pepper
- ¼ tsp crushed red pepper flakes (optional)
Cooking
Heat olive oil in a large pot over medium heat.
Add sausage and cook until browned, about 5 minutes.
Remove sausage and set aside.
In the same pot, sauté onions and garlic until softened, about 3–5 minutes.
Add chicken broth, diced tomatoes, beans, smoked paprika, black pepper, and red pepper flakes if using.
Bring to a simmer and cook for 15 minutes.
Stir in spinach or kale and cooked sausage. Cook for another 5–10 minutes until greens are wilted and flavors are combined.
