Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup shredded unsweetened coconut
  • 1 cup granulated sugar
  • ½ tsp salt
  • 1 tbsp baking powder
  • 1 tsp vanilla extract
  • 1 cup coconut milk
  • 2 large eggs
  • cup vegetable oil or melted butter

  • Preparation
  • Preheat oven to 350°F (175°C).
  • Grease and flour a 9x5-inch loaf pan.
  • In a mixing bowl, combine flour, shredded coconut, sugar, salt, and baking powder.
  • In a separate bowl, whisk together coconut milk, eggs, vanilla extract, and oil.
  • Gradually mix the wet ingredients into the dry ingredients until just combined.

Cooking

  • Pour the batter into the prepared loaf pan.
  • Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
