- 2 cups all-purpose flour
- 1 cup shredded unsweetened coconut
- 1 cup granulated sugar
- ½ tsp salt
- 1 tbsp baking powder
- 1 tsp vanilla extract
- 1 cup coconut milk
- 2 large eggs
- ⅓ cup vegetable oil or melted butter
Preparation
Preheat oven to 350°F (175°C).
Grease and flour a 9x5-inch loaf pan.
In a mixing bowl, combine flour, shredded coconut, sugar, salt, and baking powder.
In a separate bowl, whisk together coconut milk, eggs, vanilla extract, and oil.
Gradually mix the wet ingredients into the dry ingredients until just combined.
Cooking
Pour the batter into the prepared loaf pan.
Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
